These are some of my favorite salmon recipes that have been big winners at many a BBQ. As with cooking any fish, the most important thing to remember is: Don’t over-cook!

I prefer to remove the skin from the fillet, but that is a choice that you will have to make. Cutting them into serving-size portions will make them easier to handle on the grill.

Preheat your grill if it is gas, and if you want to add wood chips for some smoke flavor that is always good. Cook the fish over a medium to high heat for about 5 min on one side, then turn over and cook until done. Do not keep turning over, as the fish will dry out.

I use the fork test; when you can insert a fork without resistance, take the fish off the grill, as it will keep cooking after you remove it from the heat. Having the center a little moist is best, but some people prefer their fish a little drier.

With all of my recipes I recommend using the freshest fish you can get, and always wild-caught as opposed to farm-raised. Remember: DO NOT OVER-COOK!
